You're invited to a Distance Dinner Party

Join in a long distance dinner party, for good food, good fun and good conversation. No matter where you are, no matter what time you eat or what diet you can eat, you can enjoy the dinner party.

I'll be providing an optional recipe which can be adapted to your own preferences. Or you can have whatever you would normally eat. The important part is connecting with others and making new friends.

It's officially being held on Friday 8th March; but it's an open ended party - the beauty of a virtual experience!

Chinese Salmon with Stir-fryed Vegetables

Serves 2
  • 2 salmon steaks
  • zest of 1 lemon
  • 1 clove garlic, thinly sliced
  • 2 tbsp sweet chilli sauce
  • 310g pack beansprouts
  • 100g watercress
  • small tin of pineapple pieces in juice
  • 1 tbsp soy sauce
  • Rice or noodles, to serve (optional)
  1. Place the salmon skin side down in a small pan. Top with the lemon zest, sliced garlic and sweet chilli sauce. Add the pineapple pieces around the pan. Cover and cook on a gentle heat.
  2. Meanwhile stir-fry the beansprouts until tender.
  3. Turn the salmon over after about 4 - 5 minutes to cook the top side.
  4. Add the soy sauce, watercress and 150mls of the pineapple juice to the beansprouts. Cover and allow to wilt down.
  5. Transfer the vegetables to plates.
  6. Top with the salmon once it is cooked though.
  7. Serve with rice or noodles.
  8. Enjoy!
