Jess's Comfort Brownies

When you're having a crappy day then sometimes you need something sweet and delicious. These are seriously easy and very yummy. Great for curling up on the sofa with a cuppa. Just don't tell my sister I've just made some or she'll give me a lecture.

Ingredients
  • 175g dark chocolate (Bourneville is good, I don't like the really dark bars, too bitter)
  • 225g salted butter
  • 400g sugar
  • 3 eggs
  • 1 tsp vanilla extract (or bean paste if you're fancy like that)
  • 140g plain flour

Instructions
  1. Put the oven on to heat to 170C.
  2. Break the chocolate into a bowl and add the butter. Melt in the microwave or over a pan of slowly boiling water.
  3. Take off the heat. Add the other ingredients and mix well. Get out all the annoying lumps of white flour.
  4. Pour the batter into a pan - I have a Brownie Pan, 34 x 20 cm with a loose bottom (ha, ha! That always makes me smile) If you don't have one use a normal cake pan but line it with baking parchment. 
  5. Cook for 25 - 30 minutes. It depends on your oven. I keep checking them and use a skewer to see if the inside is cooked. It should come out almost clean, not covered with batter. Not completely clean though, you want them to be sticky inside.
  6. Leave to cool (if you can wait that long) then cut and serve.
  7. If you can be bothered to pretty-fy your brownies you can dust with icing sugar. My sister, Emma, likes to cut out paper hearts to give a dramatic shadow effect (she likes to think she's on the Great British Bake Off). Frankly that's far too much faff for me. My best friend, Annie, and I can barely wait for them to stop being molten lava hot to eat them!

It's not the end of the world if they're over or under done. They still taste amazing, either a little gooier or a little dryer. Too gooey? Use a spoon. Too dry? Add ice cream. Sorted.
