Flippin' Marvellous Top Five Favourite Pancake Toppings
I love pancakes, I can't quite believe that you can take flour, milk and eggs, mix them together and get something so delicious! They're so simple and so versatile. I like my pancakes thin and crispy; but the rest of my family prefer them thick and doughy.

Traditionally I always have pancakes for breakfast on my birthday; but a whole day dedicated to them is pretty amazing in my opinion. Pancake Day (also known as Shrove Tuesday) is the last day before Lent, when Christians used up ingredients that were forbidden until Easter. These included fat, butter and eggs. Pancakes are the perfect way to use them up!

I've been quite adventurous with pancake toppings in the past, both sweet and savoury. These are my absolute favourites.

  1. Chocolate spread and ice cream - Nutella by any other name spread over the pancake with a good scoop, normally Ben & Jerry's on top and then all wrapped up. You get that yummy melt ice cream mixing with the chocolate. Mmmm... My mouth is watering. If you want to be healthy you can add some fruit as well, strawberries, blueberries, raspberries are all lovely.
  2. Bolognese and cheese - For a savoury pancake this is quick and easy, especially if you have some frozen Bolognese sauce ready to use - it's a staple in our freezer. Just warm the mince, roll them up and then scatter over the cheese and put it under the grill to go all bubbly and crispy.
  3. Roasted Vegetable - I like this and feel quite virtuous having it. You can add sweet corn to your pancake batter which is really yummy. We've had lots of different vegetables including tomatoes, onions, courgettes, mushrooms, even celery and cucumber. You can add your choice of cheese, feta, halloumi or cheddar work well.
  4. Fresh fruit - If I'm trying to be good, or we don't have any ice cream in (shock horror) then a fruit salad mix on top of the pancake with a dollop of yogurt and some honey goes down a treat.
  5. Sugar, Lemon and/or Orange - You can't beat the classic, it's quick, simple and delicious!
