_ Without doubt it was the fastest Christmas Cake I've ever made and it tastes delicious! I know because I made a mini one for us to try. When I was making the big cake I had to endure the amazing smell of it baking and then not be able to have a slice until Christmas. I used my new pork pie tin - I've not had the chance to try it yet and baked a teeny, tiny Christmas Cake.
I can confirm in advance of Christmas that the recipe is amazing, delicious, easy and very fast. It's not as darkly fruit cake tasting, probably why I like it. I think you could remedy this by using dark muscovado sugar and an extra table spoon of mixed spice. If you haven't had chance to make a cake yet then this is the one to go with. Oh and if you want a giggle, check out the comments on the bottom. Anyone that knows what mincemeat is in the UK while think this is brilliant.
