Fast Christmas Cake - Food for any Occasion

I love preparing the annual Christmas Cake more than I actually like eating it. I'm more of a chocolate cake kind of girl; but its tradition, so I make one every year.

I actually did mine in early November; but I got a text from my brother's partner asking me to make them one to decorate, so I thought it was a great chance to try a different recipe.

Which one to choose though?!

I found this one from Good To Know - it looked really easy and with life getting busier in the run up to Christmas, easy sounded perfect.

Without doubt it was the fastest Christmas Cake I've ever made and it tastes delicious! I know because I made a mini one for us to try. When I was making the big cake I had to endure the amazing smell of it baking and then not be able to have a slice until Christmas. I used my new pork pie tin - I've not had the chance to try it yet and baked a teeny, tiny Christmas Cake.

I can confirm in advance of Christmas that the recipe is amazing, delicious, easy and very fast. It's not as darkly fruit cake tasting, probably why I like it. I think you could remedy this by using dark muscovado sugar and an extra table spoon of mixed spice.

If you haven't had chance to make a cake yet then this is the one to go with.

Oh and if you want a giggle, check out the comments on the bottom. Anyone that knows what mincemeat is in the UK while think this is brilliant. It's like the Friends episode when Rachel cooks dessert.
